Classic Basil Pesto |
Yes, pesto is easily accessible in the grocery store and you can spoon it out of the jar in 3 seconds flat! But when your spring garden comes alive with fresh herbs, and you have a beautiful, fragrant bounty of basil that you do NOT want to waste (have you seen how expensive it is in the grocery story?), try making your own! It is super simple and oh so delicious!
Pesto has many uses such as pasta sauce, topping for fish or chicken, or simply spread on a good, crusty Italian bread with a slice of tomato and a little salt and pepper!
Ingredients:
- 2 cups fresh basil leaves
- 3 lg. garlic cloves
- 1/2 cups freshly grated Parmesan cheese
- 2 Tbsp freshly grated Pecorino Romano cheese
- 1/4 cups pine nuts or walnuts
- 1/2 cups extra virgin olive oil
- Salt and freshly ground pepper
Combine the basil, garlic, cheeses and nuts in a food processor or blender. Process to mix. With the machine running, slowly add the olive oil. Season to taste with salt and freshly ground pepper and process to the desired consistency. Let stand 5 minutes before serving. Makes about 1 cup.
