Peanut Butter Fluff Dip

Well my posts certainly run the gamut, don't they?  Everything from sophisticated, to rustic, to in-a-hurry, to snacks for the kiddos.  It's true.  I wear many hats during the day - as do most of  you.  I've been blessed with a great career, a fun hobby (this blog), a wonderful family, good health, and encouraging friends.  And my posts have been reflective of all those areas at one point or another.  

This fun peanut butter fluff dip would work equally as well as a great after-school or weekend snack for the kids, or even a balanced lunchbox side.  It's just sweet enough to make them feel like its a treat, but filled with tons of protein thanks to the peanut butter and Greek yogurt.  Crisp juicy apples and crunchy strips of graham crackers make the perfect vehicles of service for little hands... but watch out - you are likely to find big hands getting in on the action as well!!  As an added plus, this takes less than 5 minutes to mix together, and keeps well in the fridge.  Don't we like things like that?

Ingredients:  (per serving)
  • 1 Tbsp creamy peanut butter
    • my favorite is Peter Pan Honey Roasted PB
  • 2 Tbsp marshmallow creme
    • yep - the fluff that comes in the jar!
  • 2 Tbsp nonfat vanilla Greek yogurt
  • a sprinkle of mini chocolate chips
  • dippers
    • apple slices
    • graham crackers
Method:
There are no fancy steps or photos for this.  Just mix together the ingredients and enjoy!

Now doesn't this look like a snack that kids would go nuts for after a long day at school?  And you can feel good serving it... much more so than a bag of cookies or chips!
