Caramel Banana Bites

Okay, so I'm not sure this even qualifies as a recipe!  You know how there are some times when you just need to have a trick up your sleeve?  .... something super easy and fast, made out of stuff you just have "around" the kitchen?  Well this is the sort of thing you can whip out for the unexpected kiddos who may be dropping by, or some such occasion where you just need a sweet bite to materialize.

Ingredients:
  • ripe banana
  • cinnamon + sugar 
  • wonton wrappers
  • * optional - some caramel pieces
  • * garnish - powdered sugar, caramel sauce, berries
  •  oil for frying

Add banana slices to the center of wontons.  Sprinkle with cinnamon and sugar.
If using caramel bits, add them to the top of the banana.  I recommend that you press them down into the banana slice just a bit.  This way , the filling will "spread" out and not be too tall.  These are the caramel bits that come in a bag already unwrapped.  But you could use caramels that you cut into pieces yourself.

Wet all four edges of the wonton wrapper with your finger dipped into water.  Fold in the opposing corners of the wonton wrapper, then the opposite sides.  Just like making an envelope.
 
Here you go! 
Heat your oil to 350 degrees.  I have my candy thermometer on the edge of the pot so I'll know when that is.  Gently lower the banana bites into the hot oil with a slotted spoon.

Turn them after about 20 seconds or so.  This goes really fast!
Remove when both sides are golden brown.  This MAY take all of 45 seconds - 1 minute.  Told you this was fast!
Let them drain on a paper towel lined plate.

Serve  hot with powdered sugar and caramel sauce.
 So this was sort of just something fun!  - but yummy!
