Apple Crescent Rollups

Honestly, I don't consider this to be much of a recipe. This is something I make for breakfast for my daughter probably two to three times a month because it's insanely quick and easy and she enjoys it.  I mean.. isn't breakfast one of those things where you sort of run out of ideas after a while?  This would definitely need to fall under the "semi-homemade" category, but so be it.   

Ingredients: 
  • 1 can of crescent rolls
  • Cinnamon
  • Brown sugar (apricot jelly works well, too)
  • 1 apple
Method: 
To avoid the need for baking spray, etc., I always use parchment paper.  Easy cleanup and no sticking.  
This is not a "measure everything" recipe." So just go with it.  Separate your crescent roll dough and sprinkle with cinnamon.  Spread brownsugar (or jelly) over the dough.  
Thinly slice apples and place two to three slices at the wide end of the dough.  
Roll up the crescents and bake.  
I tend to bake at 400F for about 9 - 10 minutes. Baking times will depend on your oven, rack settings, etc.

Sausage Stuffed French Toast

I'm almost embarrassed to even post this, because it's not even a real recipe.  Several friends asked me to post it, however, so here it is.  It's a well known fact that I have "food A.D.D."  I love familiar, comforting foods with a twist.  I also love a good sweet and salty combination - any time of the day!  
I was just hungry for something different on a lazy summer morning and decided to put a couple of my family's favorite things together - good smoky sausage and french toast.  

The awesome thing about this, is you probably have all this stuff in your kitchen right now as we speak.  Yep.  Basic stuff... as breakfast typically tends to be.  One of my kids asked if it could be made with pieces of yummy crunchy bacon.  Sure.  Knock yourself out with whatever variation you prefer.

Ingredients
Sausage Stuffed French Toast_menumusings.comThis is a concept, not an exact recipe.  I didn't measure anything as I'm assuming everyone knows how to make french toast.
  • 3 large eggs
  • Milk of choice - I probably used 1/2 cup or so
  • Sugar of choice - I only used one small scoop because I don't like it very sweet
  • Vanilla - probably a teaspoon.  Use a good vanilla (Mexican, Dominican Republic, etc).
  • Cinnamon - several good shakes
  • 1/3 pound smoked pork sausage - adjust as needed.  Andouille would work here as well, but if you want to do something like chicken/apple sausage, go for it.  Whatever YOU prefer.
  • A handful of frozen sweet peppers - red and yellow bell peppers.  I like them frozen for super quick and easy prep.  Plus the frozen ones cook down faster than fresh. 
  • Oil of choice for pan frying.  I used coconut oil.
  • Optional - syrup, honey, or powdered sugar as a topping
Step-by-Step:  
Mix your batter.  Whisk until all ingredients are incorporated and eggs are completely broken up.  Set batter aside.  For whatever reason, I usually make my french toast batter in a pie plate as they accommodate the bread nicely and are easy to deal with. 
Cut up sausage into bite sized pieces.
Saute sausage and peppers until peppers are soft and sausage has a little bit of color on them.  Set aside to cool while preparing bread.
We only buy wheat bread, but choose what is in your pantry.  Cut the crusts off of the bread, then roll the bread out flat.  Don't worry, it will puff back up.  White sandwich bread is usually more "square" but I don't ever have that on hand.  Turns out the rounded edge didn't make a difference. 

Add a spoon of sausage and peppers to the bread.  Maybe 1/4 cup?  I didn't measure.
Roll the bread around the filling and allow to rest on the "seam."

Get that batter all whisked up again to make sure the cinnamon and stuff is all mixed in.  Soak the rolled bread in the batter until bread is saturated.  Maybe a minute. 
I used virgin coconut oil in my pan.  To the hot oil, add the saturated rolls.  Keep heat fairly low.  Like medium/low-medium so the bread can get cooked through without getting overly brown first.  Put the seam side down first so it can get glued together from the batter and heat.  Ha
Using tongs, turn to brown on all sides.
Once browned on all sides, serve immediately with topping of choice.  I wanted breakfast syrup.

Oh.  One more option.  
If you have made this and it was well received, you could do this in a big casserole dish and bake them for several people at a time.  Roll the bread, add rolls to dish, pour batter over the tops, cover and let soak (even overnight).  The next morning, just bake until done.  This is how I've done my Overnight Stuffed French Toast Roll Ups in the past.

I don't even know if this is enough of a "recipe" to put on here.  It was just something I did for breakfast and shared with friends - who asked me to put it on the blog.   I had an extra avocado lying around that was gorgeous, but had no real intended purpose.  I surely didn't want it to go bad.  I mean, have you seen the price of these things? 

I absolutely love Mexican flavors and had all these things in the fridge, so I decided to put them together for an easy, healthy breakfast.   You know avocados are super healthy for you, right?  They are rich in monounsaturated fat, omega-3 fat, and very low in carbohydrates. Avocados also have 60% more potassium than bananas. They are also a great source of B vitamins, as well as vitamin E and vitamin K. They have the highest fiber content of any fruit.  So this is one Mexican recipe that you don't have to feel bad about eating.  Feel free to tweak to your preference.  It's just an idea.  If you've never tried a baked avocado, you are MISSING OUT!  They become so creamy and smooth.  Yummm.   So y'all have fun with this.

  • 1 ripe avocado
  • 2 eggs (one per each side)
  • Kosher salt and black pepper
  • Pico de gallo (prepared)
  • Shredded cheese of your choice 
    • Omit for #dairyfree #paleo #whole30 
  • Chopped cilantro 
Method:
Step 1 - Cut avocado open and remove pit.  Scoop out a bit of flesh with a small spoon (save for your avocado toast. 😁)
Step 2 - Gently crack and egg into each well that you have created.  Season with salt and pepper.  
jStep 3 - Bake 400F x 25 minutes until the white is set but the yolk is still lovely and runny.
Step 4 - Top with your favorite Mexican toppings:  Shredded cheese, pico de gallo, cilantro, etc.

Freezer Friendly Breakfast Burritos

So I was just looking through my photos and realized I had done this fun little breakfast recipe but had never put it on here!  Sometimes I don't know how things get past, but life happens, right?  First of all, I know a ton of kids who love breakfast items that come from a "box."  That runs the gamut of pop-tarts and cereal to frozen breakfast sandwiches, frozen pre-made French toast and croissants to toaster strudels.  Well guess what?  Not mine.  I'm rolling my eyes as I type.  I never felt these processed things were healthy so even when I bought them (for emergency breakfasts and such), I still always tended to make my kids a hot breakfast.  It just became our habit.  

Fast forward to times when I WANTED the kids to "just go grab yourself something and heat it up."  They balked.  "Those frozen breakfast sandwiches taste like 'plastic.'" Or "That frozen French toast is gross."  This is the beast I've created.  But I digress.  So in an effort to encourage more independence in kids getting old enough to get their own breakfast occasionally, I made these breakfast burritos.  Of course you could totally put whatever you wanted in them to personalize them... just label, wrap and freeze!  Voila!  Breakfast on-the-go filled with tons of protein and maybe a few veggies if you can sneak them in.  This also works fantastic if you live alone or just take your breakfast alone and need something fast and healthy!  Have a dorm kid?  Send them off with some of these to throw in that dorm freezer to reheat in the morning or for a midnight snack in their microwave! 


Ingredients: (4 burritos)
Ingredients for this are very touchy feely.  I made this as more of a concept.  Feel free to completely add your choice of ingredients.  Make a theme of it if you'd like!  *Have leftover fajita meat with onions and peppers?  They would fantastic in these!
  • 4 pork sausage patties
    • You could use turkey sausage, chicken sausage, andouille, or even just chopped ham/turkey, cooked bacon.  But enough where each person has enough protein/portion.
  • 6 eggs
    • I allowed 1 1/2 eggs per portion.  Change as desired.
  • Generous portion of kosher salt and ground black pepper
  • A bit of water added to the egg mixture (allows them to steam while cooking)
  • If desired, a handful of frozen mixed peppers
  • A handful of chopped frozen onions
    • The frozen ones break down faster!  
  • A pat of butter added to the peppers (maybe a Tbsp)
  • Shredded cheese of your liking, probably a cup more or less
Step-by-Step:
I'm cooking pork sausage.  Use whatever protein you'd like.  This one was raw.  If you want to use one that is precooked, you can just chop it up into bitesized pieces and skip this step.

 Cook sausage only until cooked.  Not until dry.
So now I just fix my scrambled eggs like I normally would.  Season them well as the tortilla does not come pre-seasoned.   If you have additional seasonings you enjoy, add them. 
6 large eggs (1 1/2 eggs per person)

To save myself both time AND an entire pan to clean, I'm just gonna throw my frozen onions and peppers in the microwave with a bit of butter for a couple of minutes to cook them down.   
Frozen onions + peppers + 1 Tbsp butter
 Microwave x 2 minutes or until veggies or soft.
 You may need to drain out extra liquid.
So just cook your scrambled eggs soft - but do NOT overcook them.  Only until they are softly set.  Add in your cooked veggies.   Turn off the heat.  
Have your tortillas sort of ready and staged, waiting for the filling.  I precut some pieces of cling wrap and set my tortillas out.  Use the tortillas of your choice - regular, whole wheat, low carb, paleo, whatever you choose.  
Divide the filling into four equal portions and add to the tortillas.  Add as much shredded cheese as you desire. 
Fold in the sides of the tortilla.
 Fold up the bottom.....
Then roll up!
Wrap the whole thing in the cling wrap. 
Don't forget to date and label the burritos.  This is especially important if you are using different fillings for your family members.   
The great thing about them being individually wrapped is that they won't stick together in the freezer; and they are super easy to take out to thaw and reheat. 
To reheat:  Remove from wrap, wrap in a paper towel, place on a microwave safe plate and heat up to two minutes or until hot.  Even better if you want to take them out the night before to thaw.
