Lasagna Rollata Al Forno

Oh boy... one of the most popular dishes at the Olive Garden restaurant is this lovely Lasagna Rollata Al Forno!  But its much nicer to be able to eat at home, save money, and control what you put into the dish, right?!  Well here is my version, complete with step-by-step photos to guide you to success.
Ingredients:
Marinara Sauce -
  • 2 cups of marinara sauce
    • optional - mild Italian sausage, crumbled and browned.
  • 2 cups of alfredo sauce (or a 15 oz jar)
  • 1 cup shredded Italian blend cheese
  • 1 tsp dried basil
  • 1/4 cup red wine
 5 Cheese Filling -  
  • 15 oz ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmigiano reggiano cheese
  • 1/2 cup freshly grated Romano cheese
  • 1/2 cup freshly grated Asiago cheese
  • 2 large eggs
  • dried basil
  • kosher salt and cracked black pepper
Additional Ingredients - 
  • a box of lasagna noodles
  • a small handful of Italian breadcrumbs
  • chopped parsley or thinly sliced green onions for garnish
Step-by-Step:

The sauce -
Combine marinara sauce, alfredo sauce,  Italian cheese blend, dried basil, and red wine.  Heat on medium until all combined and melted together.  Keep warm on lowest setting.
2 cups of marinara sauce
Choose your favorite brand of marinara.  I am using the Italian Sausage Marinara  that I made for my Eggplant Parmigiana a few weeks ago and had in the freezer.  Click the links if you'd like to make this from scratch.

2 cups (basically 1 jar) of alfredo sauce
 Heat until combined.
1 cup shredded Italian cheese blend
1 tsp dried basil
1/4 cup red wine.  This is optional but lends a complexity to the flavor.
Oh, can you just SEE how cheesy and wonderful it is?!  It all turns a rosé color!  Now just turn it all down and keep it warm on LOW.
The filling -
Just dump it all together and stir! 
15 oz ricotta cheese
1/2 cup shredded Mozzarella
1/2 cup freshly grated Parmigiano reggiano cheese
1/2 cup freshly grated Romano cheese
1/2 cup freshly grated Asiago cheese
2 large eggs
dried basil
Prepare lasagna noodles according to package directions.  Then drain and rinse with cold water.
Assembly - 
Spread a little of the marinara sauce onto the bottom of your casserole dish. 
Spread a spoon of filling onto each lasagna noodle.  I just used a serving spoon.  Probably about a tablespoon or so?  Try to spread it evenly.
Roll them up....!
 Set them up on end in the marinara sauce.
Spread more marinara over the top of the lasagna rolls.
Add LOTS of cheese (smile) to the top and a sprinkling of Italian bread crumbs if you want.  Then sprinkle with more dried basil. You don't have to measure, just go with it.
Italian cheese blend and dried basil
Bake for about 20 minutes covered, then 15 minutes uncovered at 350 degrees F.  Garnish as desired.

Written Method:
