Double Chocolate Chewy Coconut Bars

OH-MY-GOSH! These are quite possibly one of the most decadent cookie bars I've had in years!  They are also a snap to mix up and throw in the oven... I mean SERIOUSLY simple - as in dump-mix-bake.  Try them! Try them! TRY THEM!

  • 2/3 cup shortening + more for greasing the pan
  • 2 cups packed brown sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups all purpose flour
  • 1/2 cup semi-sweet chocolate chunks
  • 1/2 cup white chocolate chips
  • 3/4 cup chopped walnuts
  • 1/2 cup shredded coconut


Step-by-Step:
Preheat oven to 350 degrees F.  Grease a 9x13" baking pan with shortening. 
Spreading the shortening with a paper towel keeps it out of your fingernails!
In a mixing bowl, cream together the shortening, brown sugar, eggs, and vanilla. 
2/3 cup shortening
2 cups packed brown sugar
3 eggs
1 tsp vanilla
Mix well until smooth and fluffy.
 Slowly blend in the baking powder, salt, and flour.  Mix until well blended.

1/2 tsp salt
2 cups all purpose flour
Fold in the remaining ingredients (chocolate chunks, white chocolate chips, walnuts, and coconut).    
1/2 cup chocolate "chunks" (chips would work fine)
1/2 cup white chocolate chips
3/4 cup chopped walnuts
1/2 cup coconut
Spread the batter evenly in the prepared pan. 

Bake ~ 30 minutes. 
Let cool completely before cutting the bars.
