Let me start by saying that I am NOT a big fan of mayo... so I don't usually enjoy cole slaw. This recipe, however, does not have mayo... is fast, fresh, crunchy, and totally addictive! My parents love it! It comes together in a snap and is great for large crowds or pot lucks. Since there's no dairy in it, you don't have to worry about letting it sit out.

Ingredients: Serves 10 - 12
- 1 (14 oz) pkg. prepared cole slaw, shredded
- 2 cups shredded purple cabbage
- ½ cup sesame or sunflower seeds
- 1/2 cup slivered almonds
- 2 pkgs. Ramen Noodles (remove seasoning packet)
- ½ cup green onions chopped
- ½ cup butter
- 1 cup sugar
- 1 cup vegetable oil
- 2 Tbsp soy sauce
- ¼ cup red wine vinegar
Step-by-Step:
4 Tbsp butter (1/2 cup) |
2 packages of ramen noodles, broken up (discard flavor packets) |
1/2 cup sesame seeds |
1/2 cup slivered almonds |
Brown |
Cool |
Mix cole slaw mix and purple cabbage with onions and the cooled nuts and noodle mixture.

Dressing - Mix sugar, oil, soy sauce and vinegar in a jar and shake well! Add the dressing to the slaw and toss at the very last minute!!!

1 cup canola oil |
1/4 cup red wine vinegar |
2 Tbsp soy sauce |
Dress the salad with the dressing just before serving so everything won't get soggy.
Tip - This recipe can easily be cut in half for a normal household. This size (as written) works well for bringing to a party/event. Serves 10 - 12
